Our Kiritsuke knife is an Americanized version of a Japanese style slicing knife that is used mainly for thinly slicing fish, vegetables, and fruit, using push/pull cutting. It is traditionally only used by executive chefs because of its difficulty of use and significance as a symbol of status in the kitchen. Ours has a more curved blade than traditional knives and thus can be used for rocking style " cutting. This makes using the knife easier to use than its straight bladed cousin.
The blade design lends itself to making very thin cuts for sushi or slicing vegetables as well as julienning them. In addition it is often used for Cutting Herbs, Slicing Meat or Dicing Vegetables.
The hardness of AUS-10 steel is mostly caused by the incredibly high carbon-content of approximately 1.05. As a result the knives can easily be sharpened leaving you with razor-sharp results.
In addition, the combination of vanadium, chrome and molybdenum also ensures that the steel is corrosion and wear and tear resistant. AUS-10 knives will, as a result, not be prone to rust and also don’t need to be sharpened frequently.
It is not recommended to use pull through sharpeners. Stones are the best method of sharpening this higher end steel.
